Jonathan made these with the girls and I liked them even though I’m not usually a fan of pumpkin flavored food. It made a whole lot.
Ingredients:
- 3 cups all-purpose flour
- 6 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 2 teaspoons nutmeg
- 2 teaspoons ground ginger
- 2 pinches salt
- 4 eggs
- 1/2 cup firmly packed brown sugar
- 2 cups canned pumpkin puree
- 3 1/3 cups milk
- 8 tablespoons butter, melted and cooled
- Mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in large bowl.
- In a second bowl, add eggs, sugar, pumpkin, milk and butter; beat well.
- Gently fold in the flour mixture.
- Cook according to your waffle iron directions.
