Wacky Chocolate Cake

from Bideshi Baburchi

Kiran loves to make this recipe! Super easy for kids. 

Ingredients: 
  • 1 2/3 cup flour
  • 1 cup sugar (whte or brown)
  • 1/4 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup water
  • 1/3 cup oil
  • 1 tsp vinegar
  • 1/2 tsp vanilla
  • powdered sugar (opt) 
  1. Mix first five ingredeints together with a fork in an ungreased square (8"x8") pan. Mix in remaining ingredients. BAke at 350G for 35-40 minutes or until knife inserted comes out clean. If desired, sprinkle with powdered sugar when cool. 
Tip: For Double Chocolate Cake, sprinkle 1/2 cup chocolate chips (if not available use candy bar broken in pieces) on batter before baking. 

Best Ever Muffins

Ingredients: 
  • 1 3/4 cups sifted flour
  • 1/4 cup sugar
  • 2 1/2 tsp baking powder
  • 3/4 tsp salt
  • 1 well beaten egg
  • 3/4 cup milk
  • 1/3 cup oil
  • nuts, raisins, or dates (opt) 
  1. Sift dry ingredients into bowl. Make well in center
  2.  Combine egg, milk and oil. Add all at once to dry ingredients. Stir quickly, just till dry ingredients are moistened. 
  3. Fill greased muffin pan 2/3 full. Bake at 400F for about 25 minutes. 
Makes 12
Add chopped nuts, raisins or dates to batter for variety. We like to add in chocolate chips or stir in strawberry jam. 

Marinara Sauce

We love this marinara sauce. Kiran makes it for us every week.

Ingredients:

  • 1/2 cup finely chopped onions
  • 2 garlic cloves minced
  • 1 Tsbp oil
  • 1 kg tomatoes skinned and chopped (we don't skin them)
  • 1 tin tomato paste (6oz) (we use one box of tomato puree 200g) 
  • 1 tsp sugar
  • 2 tsp basil (we use three of the Pizza Hut italian seasoning packets) 
  • 1 1/2 ts salt
  1. Fry onions and garlic in oil. Add remaining ingredients and simmer covered for 20 minutes. serve with ravoili or other pasta. 

Chicken Nuggets

Ingredients:

  • Chicken (1" boneless pieces) 
  • 1 cup bread crumbs (or grated Rusk) 
  • 1 tsp salt
  • 2 tsp Parmesan cheese (opt) (I have never used this) 
  • 1/4 tsp pepper
  • 3 tsp basil (opt) (we use three of the itaalian seasoning packets that we get with our Pizza Hut pizzas) 
  • 1/4 cup melted butter (we use way more) 
  1. Mix break crumbs, sat, pepper, basil and cheese. 
  2. Dip chicken in butter then coat with crumb mixture. Place on baking tray. 
  3. Bake at 375F for 10 min (we only do about 8 min each side), then turn over and cook 10 more minutes. 

Golden Potato Soup

Ingredients:

  • 2 Tbsp oil
  • 1/3 cup chopped onions
  • 1 tbsp flour
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 cup hot drinking water
  • 1 cup (or more) mashed potatoes
  • 2 cups milk
  • 1/2 cup shredded cheese
  1. Fry onions in oil. Add flour, salt, and pepper and stir constantly. Add water slowly and stir constantly. Boil 2 minutes. Add poataoes, milk and cheese and heat until cheese melts but do not boil. Serve hot. 
I know I changed this a little when I made it but I forgot how. I'll update it once colder days come and I actually want to make a warm soup again. 

Onion-Roasted Potatoes

Ingredients: 
  • 1 envelope Lipton Recipe Secrets Onion Soup Mix
  • 4 medium all-purpose potatoes, cut into large chunks (about 2 lbs) 
  • 1/3 cup vegetable oil
  1. Preheat oven to 425F. In a 13x9in baking or roasting pan, combine all ingredients, 
  2. Bake, stirring occasionally, 35 minutes or until potatoes are tender golden brown. 

4 Ingredient Chicken Marinade

Ingredeints:

  • 1 cup brown sugar
  • 1 cup oil
  • 1/2 cup soy sauce
  • 1/2 cup vinegar
  1. Fire up the grill and preheat to medium high. Place the chicken breasts on the grill and do not touch them for 6 min. Right at 6 min, you flip them over and then dont touh them for another 4 to 5 min. Then you put in on the plate, let it rest a bit (not long) and then serve. 

Deviled Egg Salad

The eggs here are hard to make into deviled eggs. This has the taste without the hassle of those egg white cups being too thin.

serves 4-6

Ingredients:

  • 1 dozen large, hard-boiled eggs, roughly chopped (16-18 India sized eggs) 
  • 2 Tbsp grated onion
  • 1 clove garlic, pasted or grated
  • 2 tablespoons pickle relish
  • about 1 tsp Worcestershire sauce
  • 1 tbsp mustard, yellow or Dijon
  • 2 tsp- 1 tbsp hot sauce
  • salt and papper
  • 1 tsp paprika
  • 3-4 tbsp mayonnaise
Possible toppings: 
  • chopped bacon
  • crispy fried prosciutto
  • chopped green olives
  1. Place the eggs into a large bowl. Grate the onion directly over the bow to catch the onion juice and add the garlic, relish, Worcestershire sauce, mustard, hot sauce, salt, pepper, paprika, and mayo- just a few tablespoons to start. Mash into desired consistency. 
  2. Serve on a few slices of toast and garnish with toppings of your choice. 

Sauteed French Green Beans

Ingredients:

  • salt (1 tsp per L/qt of water)
  • 8 large handfuls small, French beans
  • 5 large shallots
  • 4 large garlic cloves
  • 1 tbsp butter 
  •  1 tbsp olive oil
  • 1/2 tsp sea salt (for finishing) 
  • 1/4 tsp freshly ground black pepper
  1. Bring a large pot of water to a boil and add the salt. 
  2. Prepare the beans by cutting off the stem (if necessary). If the beans are large, French the beans or cut them diagonally into bite-sized pieces. 
  3. Add the beans to the boiling water and blanch for 2-3 minutes, or until the beans are still a little bit crunchy. Strain the beans. 
  4. Heat a large saute pan over med-high heat. Add the butter and oil. 
  5. Once hot, add the minced shallots and saute for about 2 min or until translucent and they start to brown slightly. Add the crushed garlic and cook for another 30 seconds, being careful not to burn the garlic. Add the cooked beans to the pan and sauute for about 1 to 2 min, stirring to combine all of the ingredients. Season with salt and freshly ground black peper. Cook uuntil the beans are warmed through. Serve immediately. 

Roasted Okra

Ingredients:

  • 18 fresh okra pods, sliced 1/3 in thick
  • 1 Tbsp olive oil 
  • 2 tsp kosher salt, or to taste
  • 2 tsp black pepper, or to taste
1. Preheat an oven to 425F (220C)
2. Arrange the okra slices in one layer on a foil lined cookie sheet. Drizzle with olive oil and sprinkle with salt and pepper. Bake in the preheated over for 10 to 15 minutes. 


Amish Baked Oatmeal

Ingredients:

  • 1/3 cup butter
  • 3 eggs
  • 3/4 cup brown sugar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp vanilla
  • 1 tsp nutmeg or cinnamon
  • 1/4 tsp salt
  • 1 cup milk + 2 Tbsp milk
  • 3 cups oatmeal (regular or quick)
  1. Melt butter. 
  2. Grease 1 1/2 quart baking dish & drop in eggs & beat well. 
  3. Add brown sugar,baking powder, vanilla, nutmeg or cinnamon, and salt. Mix well. No lumps. 
  4. Whisk in butter and both measures of milk, then add oats. 
  5. stir well, and refrigerate overnight. 
  6. Bake, uncovered, at 350F for 35-45 min or until set in the middle. 
  7. Serve hot with warm milk poured over.

Brandy's Tuna Noodle Casserole


Ingredients: 
  • stick of butter (100g) 
  • sm Amul cream (200mL)
  • can of tuna
  • spices (Ranch 2 Tbsp)
  • 500g pasta (fusilli, bowtie, pene, etc) 
  1. Boil pasta & drain
  2. Melt butter in same pan. Add tuna. Add spices. Add cream unjust long enough to warm. 
  3. Return pasta to misture & serve. 

Aunt Erin T's Cinnamon Rolls


Day 1:
  • 1 cup milk (very warm)
  • 1/2 cup butter (add to milk to melt) 
  • 1 cup warm water
  1. Melt butter in milk. 
  2. Add water and allow mixture to cool slightly
  3. Mix in :
  • 1 Tbsp yeast
  • 1 cup sugar
  • 1 tsp salt
  • 2 eggs
  • 4 cups flour- add flour one cup at a time until soft dough forms
     4. Knead on floured surface until elastic 

Day 2: (or 2hr at least) 

     5. Roll into 2 rectangles
     6. Spread with soft butter
     7. Mix brown sugar with cinnamon powder to taste. Spread over butter. 
     8. Roll up- slice evenly and place on greased pans (Let it rise again if time) 


Optional Glaze: 
  • 2 Tbsp butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla
  • 5-6 Tbsp milk
*also try subbing orange juice or chocolate milk for milk 

Aunt Felicia's Lemon Brownies

Ingredients

  • 3/4 cup flour
  • 3/4 cup sugar
  • 1/4 tsp salt
  • 1/2 cup butter (soft)
  • 2 eggs
  • 1 Tbsp lemon juice
  1. Combine flour, sugar, and salt. 
  2. Mix in the softened butter. 
  3. In another bowl, mix together eggs and lemon juice. 
  4. Add to the larger bowl and mix until smooth.
  5. Pour into buttered 8x8 pan and bake at 350F (175C) for 22 min
Glaze
  • 1/2 cup powdered sugar 
  • 1 Tbsp lemon juice
  1. Stir together until smooth. 
  2. Pour over warm brownies.
